With the continuous vigorous development of the catering industry, the treatment of urban catering fumes has become an important part of the city's blue sky defense battle. The research shows that the contribution of catering sources to atmospheric compound pollution is multifaceted, firstly, it is a direct emission source of PM2.5, and secondly, cooking will produce a variety of volatile organic compounds, which can react with nitrogen oxides in the environment, enhance the oxidation of the atmosphere, and accelerate the formation of secondary particulate matter.

Air pollutants in the catering industry are discharged into the environment in the form of soot particulate matter and VOCs, which are gas, solid and liquid three-phase mixtures composed of oil, organic matter and pyrolysis or pyrolysis products emitted from foodstuffs, edible oils and seasonings in the process of cooking and processing. The pollution of oil smoke to the environment is mainly manifested as volatile oil substances with strong viscosity, which will be bonded to the wall and various wall surfaces after a long time, making the surface of the wall black and extremely difficult to clean, which not only destroys environmental sanitation, but also affects the urban landscape. In addition, the oil smoke is an aerosol, in which the liquid particulate matter is condensed in the exhaust cylinder and the outlet when cold, forming viscous oil droplets, and the oil droplets are mixed with the sediment and dust in the environment to form oil stains that are difficult to eliminate, which are attached to the inner wall of the exhaust cylinder and the outer wall of the pipeline interface and the surrounding buildings, and become a fire hazard for a long time.

Cooking fumes are also one of the main sources of volatile organic compounds (VOCs) and PM2.5 (inhalable particulate matter with particles less than 2.5 μm) in the atmosphere. First of all, oil smoke is the direct emission source of PM2.5, and at the same time, some volatile organic compounds in oil smoke react with nitrogen dioxide in the atmosphere to form more complex and harmful photochemical smog, and at the same time enhance the oxidation of the atmosphere, accelerate the formation of secondary particulate matter, make the environmental atmosphere more and more seriously polluted, and pose a direct threat to human health.

Under the condition of increasingly strict requirements for ecological environment management, the treatment of cooking fumes in the catering industry has been continuously promoted, and the products, services and technologies related to catering fumes have been continuously developed. However, due to the low threshold of the oil fume purification equipment industry and the fierce competition in the market, there are still many problems. Due to the low technical content of oil fume purification equipment, the industry threshold is low, and the competition between production enterprises is becoming more and more fierce, resulting in some manufacturers or distributors to shoddy and low-price competition, resulting in poor equipment performance, short service life, and large potential safety hazards, and even unable to operate normally. At present, more than 80% of the catering enterprises in the market use electrostatic fume purifiers, many users do not carry out regular cleaning and maintenance of electrostatic fume purification equipment, equipment manufacturers after-sales service is not perfect, and the treatment effect is not ideal.

In order to solve the pain points of the catering fume treatment industry, the 22nd China International Environmental Protection Exhibition, which opened on April 11, 2024, set up a "fume control service area" for the first time.

The meeting issued the group standard of China Environmental Protection Industry Association "Technical Specifications for the Operation and Maintenance of Electrostatic Catering Fume Purification Equipment", which provides service standards for the weak links in the industrial chain, clarifies the standardization requirements for the operation and maintenance cleaning of electrostatic catering fume purification equipment, and promotes the centralized cleaning and maintenance of the most used electrostatic fume purification facilities in the catering industry, so as to realize the unified collection, centralized treatment, and stable discharge of pollutants, and focus on solving the problems of pollution control and development of small and medium-sized enterprises, and opening up the "blocking point" of green development of catering unitsPromote the green development of the catering industry.

Through the implementation of the standardization of operation and maintenance services of electrostatic catering fume purification equipment, it will effectively promote the low-carbon and green development of the catering fume treatment industry. Taking the emission reduction work of the integration of fume supervision and service in Tangshan carried out by a member unit of catering fume treatment of China Environmental Protection Industry Association in Tangshan as an example: the company operated and maintained 5,817 electrostatic fume purification equipment with a wind volume of about 8,000m3/h in Tangshan, and adopted a centralized cleaning method and standardized operation and maintenance services, the annual fume emission reduction was about 1,087 tons, and the annual emission reduction of fume purification equipment was reduced by 42,000 tons, and carbon emissions were reduced by 4,494.7 tons.
